Shaped Initial Biscuits

You’ll need:
125g butter, chopped and softened
1/2 cup caster sugar
1 egg yolk (keep the white for the icing)
2 cups plain flour
1 tsp bicarb soda
1/4 cup honey

Oven to 180 degrees C. Beat the butter and sugar until creamy, add the yolk and beat well. Fold in the sifted flour and bicarb. Heat honey in a microwave safe bowl in the microwave on high for 20 seconds. Pour into dough and mix well. Cover with plastic wrap and place in fridge for 30 minutes. Knead gently on lightly floured surface and roll out between two sheets of baking paper until around 0.5cm thick. Cut your shapes or use a butter knife to cut out large initials and place on baking trays lined with non-stick baking paper. Bake for 15-20 minutes until firm to touch. Allow to cool then ice.
To make the icing: Beat the eat white until frothy. Add 1 and a quarter cups of sifted pure icing sugar a little at a time, beating well after each addition. Add drop of lemon juice if you like and food colouring of your choice.
